Nellie Pigot’s immune boosting go to recipe that she uses a lot at the first sign of a sniffle:
Take 1 yellow onion, chop finely and add to olive oil/coconut oil in a medium pan.
Cook for 5 minutes and when translucent and beginning to colour, add 3 – 4 cloves of crushed garlic.
Add 1/2 tsp of turmeric and cook for a further minute.
Add 2 finely chopped sticks of celery
Add 2 carrots finely chopped and one tomato chopped.
Add a stick of rosemary, sprigs of thyme and a bay leaf.
Stir around for 5 minutes until the carrots and celery begin to soften.
Add vegetable stock to cover and simmer until nearly soft.
Finely slice some kale, cabbage or broccoli and add to the pot, grate a knob of ginger and add as well.
Simmer until the greens are soft and the vegetables tender.
Check seasoning and add extra salt/pepper to taste.
Garnish with finely chopped herbs such as parsley or coriander.
I like to leave the soup lumpy but blend if preferred.
